Mothers day is all about spoiling your mum and letting her know how much you really appreciate all those special little things that she does throughout the year to make life just that little bit easier.
Every mum loves chocolate but with all the attention on a healthy lifestyle these days it's hard to come up with a dessert that will fit into the dietry requirements that mum will find acceptable.
This dessert takes an old favourite but eliminates the cream to provide a more healthier option by replacing it with ricotta cheese. This way mum can enjoy the taste of a great chocolate mousse without feeling the guilt that often follows.
Chocolate Ricotta Mousse
200g ricotta cheese
2 eggs, separated
2 Tbsp icing sugar
200g dark chocolate, melted
To melt the chocolate, place into a heat-proof bowl and place over simmering water. Stir continuously until smooth with no lumps.
Place the ricotta, egg yolks and icing sugar in a food processor and blitz until smooth and light.
Now add the melted chocolate with the motor still running until well combined.
Whisk the egg whites until they form stiff peaks then carefully fold through the choc/ricotta mixture.
Spoon into serving glasses and refrigerate for 1-2 hours.
Decorate with fresh strawberries and a sprig of mint and even a dollop of whipped cream if you dare.
Serves 4.
